- Add the peel and bring it to boiling point then reduce it to a simmer and cook for approximately 45 minutes until the orange rind is really soft. If there is any liquid left drain. Mine became gloopy and really sticky so I had to work quickly before it cooled down and hardened..
- Line a baking tray with greaseproof paper and add 150g sugar spread out..
- Toss the orange rind evenly in the sugar, separating any rinds that are stuck together..
- Transfer the coated rind to a tray lined with foil..
- Cover the tray with a tea towel and let it dry for 1-2 days. Then place in an airtight container and enjoy..
